Ingredients:

    • 8 large shrimp, peeled and deveined
    • 8 large scallops

    • 2 tablespoons olive oil
  • For the Creamy Soup:
    • 2 tablespoons butter
    • 1 onion, finely chopped
    • 2 garlic cloves, minced
    • 1/4 cup white wine
    • 2 cups fish stock
    • 1 cup heavy cream
    • Salt and pepper, to taste
    • Fresh parsley, chopped, for garnish

    • Season the shrimp and scallops with salt and pepper.
    • Heat olive oil in a large skillet over medium-high heat.

    • Add fish stock and bring to a simmer.
    • Stir in heavy cream, season with salt and pepper, and let simmer for 5 minutes until slightly thickened.
  3. Combine and Serve:
    • Return the seared scallops and shrimp to the skillet.
    • Warm through in the creamy soup for about 1-2 minutes.
    • Garnish with chopped parsley.
    • Serve hot, ideally with crusty bread for dipping.
