Creamy Smothered Pork Chops
Ingredients:
- 4 boneless pork chops
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- Fresh thyme leaves for garnish (optional)
Instructions:
- Prepare the Pork Chops:
- Season both sides of the pork chops with salt and black pepper.
- Sear the Pork Chops:
- Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear for about 3-4 minutes on each side until golden brown. Remove the pork chops from the skillet and set aside.
- Sauté the Onion and Garlic:
- In the same skillet, add the sliced onion and sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional 1 minute until fragrant.
- Make the Sauce:
- Pour in the chicken broth, stirring to deglaze the skillet and scrape up any browned bits from the bottom. Let it simmer for about 2 minutes.
- Reduce the heat to medium-low and add the heavy cream, Dijon mustard, Parmesan cheese, and dried thyme. Stir well to combine and let the sauce simmer for about 5 minutes until it thickens slightly.
- Smother the Pork Chops:
- Return the seared pork chops to the skillet, spooning some of the sauce over them. Cover the skillet and let the pork chops cook in the sauce for about 10-12 minutes, or until they are cooked through and tender.
- Garnish and Serve:
- Garnish with fresh thyme leaves if desired. Serve the creamy smothered pork chops hot, spooning extra sauce over the top.
