Creamy Spicy Noodle Soup Recipe

 

 

Ingredients:

  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons red curry paste
  • 1 can (400ml) coconut milk
  • 4 cups chicken or vegetable broth
  • 1 tablespoon soy sauce or fish sauce
  • 1 teaspoon sugar
  • 200g rice noodles or your choice of noodles
  • 1 cup cooked chicken, shrimp, or tofu (optional)
  • 1 cup fresh spinach or bok choy
  • 1/2 teaspoon chili flakes or chili oil (adjust to your spice level)
  • Juice of 1 lime
  • Fresh cilantro or basil for garnish

Instructions:

  1. Prepare the Broth:
    • Heat the vegetable oil in a large pot over medium heat.
    • Sauté the garlic, onion, and ginger until fragrant (about 2 minutes).
    • Stir in the red curry paste and cook for another minute.
  2. Build the Flavor:
    • Add the coconut milk and stir well to combine with the paste.
    • Pour in the broth and bring it to a gentle boil.
  3. Season the Soup:
    • Add soy sauce (or fish sauce) and sugar.
    • Adjust seasoning to taste.
  4. Cook the Noodles:
    • Add the rice noodles to the pot and cook as per package instructions.
    • If using pre-cooked protein (chicken, shrimp, or tofu), add them at this stage.
  5. Add Vegetables:
    • Toss in the spinach (or other greens) and simmer for another 2 minutes.
  6. Finish:
    • Stir in lime juice and chili flakes/oil.
    • Serve hot, garnished with fresh cilantro or basil.
