Creamy Spicy Noodle Soup Recipe
Ingredients:
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1 tablespoon fresh ginger, grated
- 2 tablespoons red curry paste
- 1 can (400ml) coconut milk
- 4 cups chicken or vegetable broth
- 1 tablespoon soy sauce or fish sauce
- 1 teaspoon sugar
- 200g rice noodles or your choice of noodles
- 1 cup cooked chicken, shrimp, or tofu (optional)
- 1 cup fresh spinach or bok choy
- 1/2 teaspoon chili flakes or chili oil (adjust to your spice level)
- Juice of 1 lime
- Fresh cilantro or basil for garnish
Instructions:
- Prepare the Broth:
- Heat the vegetable oil in a large pot over medium heat.
- Sauté the garlic, onion, and ginger until fragrant (about 2 minutes).
- Stir in the red curry paste and cook for another minute.
- Build the Flavor:
- Add the coconut milk and stir well to combine with the paste.
- Pour in the broth and bring it to a gentle boil.
- Season the Soup:
- Add soy sauce (or fish sauce) and sugar.
- Adjust seasoning to taste.
- Cook the Noodles:
- Add the rice noodles to the pot and cook as per package instructions.
- If using pre-cooked protein (chicken, shrimp, or tofu), add them at this stage.
- Add Vegetables:
- Toss in the spinach (or other greens) and simmer for another 2 minutes.
- Finish:
- Stir in lime juice and chili flakes/oil.
- Serve hot, garnished with fresh cilantro or basil.
