Creamy Tomato Basil Chicken Pasta
Ingredients:
- For the Chicken:
- 1.5 pounds chicken breast, cut into strips
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 2 tablespoons olive oil
- For the Pasta:
- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup heavy cream
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions:
- Cook the Chicken:
- Season the chicken strips with salt, pepper, garlic powder, and Italian seasoning.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken strips and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the skillet and set aside.
- Cook the Pasta:
- Cook the penne pasta according to package instructions until al dente. Drain and set aside.
- Prepare the Sauce:
- In the same skillet used for the chicken, heat 2 tablespoons of olive oil over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another minute.
- Stir in the diced tomatoes, heavy cream, and chicken broth. Bring to a simmer.
- Add the grated Parmesan cheese, dried basil, and dried oregano. Stir until the cheese is melted and the sauce is well combined.
- Season with salt and pepper to taste.
- Combine and Serve:
- Add the cooked penne pasta and chicken strips back to the skillet. Stir until everything is well coated with the sauce and heated through.
- Garnish with fresh basil leaves before serving.
