Creamy Tuscan Chicken Pasta
Ingredients:
- 2 boneless, skinless chicken breasts, sliced
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, diced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 8 oz penne pasta, cooked al dente
Instructions:
- Prepare Chicken: Season the chicken slices with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden and cooked through, about 6-8 minutes per side. Remove from skillet and set aside.
- Cook Vegetables: In the same skillet, add a bit more oil if needed. Sauté onion and garlic until the onion becomes translucent. Add cherry tomatoes and cook until they start to break down, about 3 minutes.
- Add Cream and Spinach: Stir in the spinach and cook until it begins to wilt. Pour in the heavy cream and chicken broth, and bring to a simmer. Add Italian seasoning and stir in the Parmesan cheese until melted and combined.
- Combine with Pasta: Add the cooked pasta to the skillet, tossing to coat in the sauce. Return the chicken to the skillet, nestling it into the pasta. Cook for an additional 2-3 minutes to reheat the chicken and mingle the flavors.
- Serve: Check for seasoning and adjust with salt and pepper as needed. Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired.
