Crepes with Creamy Custard Sauce Recipe

 

 

 

For the Crepes:

  • 1 cup all-purpose flour
  • 2 eggs
  • 1 1/2 cups milk
  • 1 tbsp sugar (optional)
  • 1/2 tsp vanilla extract
  • 2 tbsp melted butter
  • Pinch of salt

For the Custard Sauce:

  • 2 cups milk
  • 2 egg yolks
  • 1/4 cup sugar
  • 1 tbsp cornstarch
  • 1/2 tsp vanilla extract
  • 2 tbsp butter

Instructions:

Step 1: Make the Crepes

  1. In a mixing bowl, whisk eggs and milk until smooth.
  2. Gradually add flour, sugar, and salt, whisking to avoid lumps. Stir in melted butter and vanilla.
  3. Heat a non-stick pan over medium heat. Lightly grease with butter.
  4. Pour a thin layer of batter (about 1/4 cup) and swirl to coat the pan.
  5. Cook for 1-2 minutes, flip, and cook the other side. Repeat for all batter.

Step 2: Prepare the Custard Sauce

  1. In a saucepan, heat milk over medium heat.
  2. In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
  3. Gradually add the warm milk to the egg mixture while whisking.
  4. Pour back into the saucepan and cook on low heat until thickened. Stir constantly to avoid lumps.
  5. Remove from heat, add vanilla and butter, and stir until smooth
