Crispy Cheesy Potato Stacks

 

Ingredients:

  • 4 large russet potatoes, thinly sliced 🥔
  • 3 tablespoons unsalted butter, melted 🧈
  • 1/2 cup heavy cream 🥛
  • 1 teaspoon garlic powder 🧄
  • 1 teaspoon dried thyme 🌿
  • 1/2 teaspoon salt 🧂
  • 1/2 teaspoon black pepper
  • 1 cup shredded Parmesan cheese 🧀
  • 1/2 cup shredded cheddar cheese 🧀
  • Fresh chives for garnish 🌱

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin.
  2. Prepare the potatoes: Slice the potatoes very thinly using a mandoline or sharp knife.
  3. Season: In a bowl, mix melted butter, heavy cream, garlic powder, thyme, salt, and black pepper. Toss the potato slices in this mixture.
  4. Stack the potatoes: Layer potato slices in the muffin tin, sprinkling Parmesan and cheddar cheese between each layer.
  5. Bake: Place in the oven and bake for 45-50 minutes, or until golden brown and crispy on the edges.
  6. Garnish & Serve: Let cool slightly, then remove from the muffin tin. Garnish with fresh chives and serve warm!

💡 Tip: For extra crispiness, broil for 2-3 minutes at the end!
