Crispy Chicken with Burrata, Roasted Cherry Tomatoes, and Basil

 

Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups panko breadcrumbs
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup vegetable oil (for frying)

For the Toppings:

  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 ball of burrata cheese (about 200g), torn into pieces
  • Fresh basil leaves, torn or whole
  • Balsamic glaze, for drizzling
  • Extra virgin olive oil, for drizzling

Instructions:

1. Prepare the Chicken:

  • Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness (about ½ inch thick).
  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  • Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs and grated Parmesan cheese.
  • Dredge each chicken breast in the flour, shaking off the excess.
  • Dip the floured chicken into the beaten eggs, allowing any excess egg to drip off.
  • Press the chicken into the panko-Parmesan mixture, ensuring it is fully coated.

2. Fry the Chicken:

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Fry the breaded chicken breasts in batches, cooking for 3-4 minutes per side until golden brown and cooked through.
  • Remove the chicken from the oil and drain on a plate lined with paper towels.

3. Roast the Cherry Tomatoes:

  • Preheat your oven to 400°F (200°C).
  • Toss the cherry tomato halves with 1 tablespoon of olive oil, salt, and pepper.
  • Spread the tomatoes on a baking sheet and roast for 10-15 minutes until they are soft and slightly caramelized.

4. Assemble the Dish:

  • Place the crispy chicken cutlets on a serving platter.
  • Top each cutlet with pieces of burrata cheese.
  • Spoon the roasted cherry tomatoes over the burrata.
  • Garnish with fresh basil leaves.

5. Finish with Drizzles:

  • Drizzle the entire dish with balsamic glaze and extra virgin olive oil.
  • Season with additional salt and pepper to taste.

6. Serve:

  • Serve the dish warm, allowing the burrata to melt slightly over the crispy chicken, and enjoy the combination of textures and flavors.
