Ingredients:
For the Chicken:
- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups panko breadcrumbs
- 1 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup vegetable oil (for frying)
For the Toppings:
- 1 cup cherry tomatoes, halved
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 ball of burrata cheese (about 200g), torn into pieces
- Fresh basil leaves, torn or whole
- Balsamic glaze, for drizzling
- Extra virgin olive oil, for drizzling
Instructions:
1. Prepare the Chicken:
- Place each chicken breast between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness (about ½ inch thick).
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
- Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with a mixture of panko breadcrumbs and grated Parmesan cheese.
- Dredge each chicken breast in the flour, shaking off the excess.
- Dip the floured chicken into the beaten eggs, allowing any excess egg to drip off.
- Press the chicken into the panko-Parmesan mixture, ensuring it is fully coated.
2. Fry the Chicken:
- Heat the vegetable oil in a large skillet over medium-high heat.
- Fry the breaded chicken breasts in batches, cooking for 3-4 minutes per side until golden brown and cooked through.
- Remove the chicken from the oil and drain on a plate lined with paper towels.
