  • Ingredients:

    For the Filling:

    • 2 cups feta cheese, crumbled
    • 1 cup ricotta cheese (or cottage cheese as a substitute)
    • 1 egg, beaten
    • A handful of parsley, chopped
    • Salt and black pepper to taste

    For the Börek:

    • 1 pa

    ckage of phyllo dough (thawed if frozen)

  • 1/2 cup unsalted butter, melted
  • 1 egg (for egg wash), beaten

Instructions:

  1. Prepare the Filling:
    • In a mixing bowl, combine the crumbled feta, ricotta cheese, beaten egg, chopped parsley, salt, and black pepper. Mix until well combined.
  2. Prepare the Phyllo Dough:
    • Preheat your oven to 375°F (190°C).
    • Lay out a sheet of phyllo dough on a clean surface and brush it lightly with melted butter. Place another sheet on top and brush again with butter. (Keep the phyllo dough covered with a damp cloth when not in use to prevent it from drying out.)
    • Cut the layered phyllo into strips about 3 inches wide.
  3. Assemble the Böreks:
    • Place a spoonful of the cheese mixture at one end of each strip. Fold the phyllo over the filling to form a triangle, continuing to fold it like a flag until you reach the end of the strip.
    • Arrange the folded böreks on a baking sheet lined with parchment paper. Brush the tops with beaten egg for a golden finish.
  4. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until golden brown and crispy.
