“Crispy Golden Chicken Wings”
Ingredients:
- 2 lbs chicken wings, tips removed, drumettes and flats separated
- 1 tablespoon baking powder (NOT baking soda)
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon black pepper
- Oil for frying
Instructions:
- Preparation:
- Pat the chicken wings dry with paper towels. This step is crucial for crispy skin.
- In a large bowl, mix the baking powder, salt, garlic powder, paprika, and black pepper.
- Add the chicken wings to the bowl and toss to evenly coat with the seasoning mix.
- Frying:
- Fill a large pot or deep fryer with enough oil to cover the wings and heat to 375°F (190°C).
- Add the wings to the oil in batches, being careful not to overcrowd the pot.
- Fry for about 10-12 minutes or until the wings are golden brown and crispy.
- Remove the wings from the oil and drain on paper towels.
- Serving:
- Serve the wings hot with your choice of dipping sauces such as blue cheese dressing, ranch, or a spicy buffalo sauce.
