Crispy Parmesan Fried Tomatoes
Ingredients:
- 4 large firm tomatoes
- Salt and pepper, to taste
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Oil for frying (vegetable, canola, or olive)
Instructions:
- Prepare the Tomatoes:
- Slice the tomatoes into 1/2-inch thick rounds.
- Season each slice with salt and pepper.
- Set Up Dredging Station:
- Place the flour on a plate.
- Beat the eggs in a shallow bowl.
- Mix the breadcrumbs, grated Parmesan, dried basil, and oregano on another plate.
