Crispy Potato Pancake (Rösti)

 

 

 

Ingredients:

  • 4 large potatoes (Yukon Gold or Russet are ideal)
  • 2 tablespoons all-purpose flour (optional, for binding)
  • 1/4 cup grated Parmesan cheese (optional, for flavor)
  • Salt and pepper to taste
  • 3 tablespoons unsalted butter
  • 2 tablespoons vegetable oil
  • Fresh parsley or chives, chopped (for garnish)

Instructions:

  1. Prepare the Potatoes:
    • Peel the potatoes and grate them using a coarse grater.
    • Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step ensures a crispy pancake.
  2. Mix the Ingredients:
    • In a large mixing bowl, combine the grated potatoes with flour (if using), Parmesan cheese (if using), salt, and pepper. Mix well.
  3. Cook the Pancake:
    • Heat a non-stick or cast-iron skillet over medium heat.
    • Add 1 tablespoon of butter and 1 tablespoon of vegetable oil to the skillet.
    • Spread the potato mixture evenly in the pan, pressing it down gently with a spatula to form a compact layer.
  4. Fry the Pancake:
    • Cook the pancake for 8-10 minutes on one side, or until golden brown and crispy.
    • Carefully flip the pancake. Add another tablespoon of butter to the skillet if needed, and cook for an additional 8-10 minutes until the other side is crispy.
  5. Serve:
    • Transfer the pancake to a plate and garnish with freshly chopped parsley or chives.
    • Slice into wedges and serve hot.
  6. Optional Add-Ons:
    • Serve with sour cream or applesauce for a delicious side.
    • Add shredded onion or garlic to the potato mix for extra flavor.
