Crispy Potato Pancake (Rösti)
Ingredients:
- 4 large potatoes (Yukon Gold or Russet are ideal)
- 2 tablespoons all-purpose flour (optional, for binding)
- 1/4 cup grated Parmesan cheese (optional, for flavor)
- Salt and pepper to taste
- 3 tablespoons unsalted butter
- 2 tablespoons vegetable oil
- Fresh parsley or chives, chopped (for garnish)
Instructions:
- Prepare the Potatoes:
- Peel the potatoes and grate them using a coarse grater.
- Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. This step ensures a crispy pancake.
- Mix the Ingredients:
- In a large mixing bowl, combine the grated potatoes with flour (if using), Parmesan cheese (if using), salt, and pepper. Mix well.
- Cook the Pancake:
- Heat a non-stick or cast-iron skillet over medium heat.
- Add 1 tablespoon of butter and 1 tablespoon of vegetable oil to the skillet.
- Spread the potato mixture evenly in the pan, pressing it down gently with a spatula to form a compact layer.
- Fry the Pancake:
- Cook the pancake for 8-10 minutes on one side, or until golden brown and crispy.
- Carefully flip the pancake. Add another tablespoon of butter to the skillet if needed, and cook for an additional 8-10 minutes until the other side is crispy.
- Serve:
- Transfer the pancake to a plate and garnish with freshly chopped parsley or chives.
- Slice into wedges and serve hot.
