Crispy Salmon Patties
These golden salmon patties a♥re crispy on the outside, tender and flavorful inside, and incredibly easy to prepare. They make a delicious family-friendly meal that works perfectly for lunch, dinner, or a quick weeknight dish.
Ingredients
2 cans salmon, 14.75 ounces each, drained and flaked
2 large eggs
3/4 cup breadcrumbs

1/3 cup finely diced onion
2 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 tablespoon fresh lemon juice
2 tablespoons chopped fresh parsley

1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil or vegetable oil, for frying

Fresh lemon wedges
Tartar sauce, remoulade, or your favorite dipping sauce
Fresh parsley, optional
Preparation Steps

Drain the salmon well and place it in a large mixing bowl. Flake it with a fork and remove any large bones or skin if desired.
Add the eggs, breadcrumbs, onion, mayonnaise, Dijon mustard, lemon juice, parsley, garlic powder, smoked paprika, salt, and black pepper.
Mix gently until everything is evenly combined. Let the mixture rest for about 10 minutes so the breadcrumbs can absorb some moisture.
Divide the mixture into 6 to 8 portions and shape each portion into a firm patty.
Heat the oil in a large skillet over medium heat.
Add the salmon patties in batches without overcrowding the pan.
Cook for about 4 to 5 minutes per side, or until deeply golden, crispy, and heated through.
Transfer the cooked patties to a paper towel-lined plate and let them rest for a few minutes before serving.
