Crispy Smashed Potatoes Recipe

 

Ingredients:

  • 1 1/2 pounds small potatoes (Yukon Gold or red potatoes work well)
  • 2-3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  2. Cook the Potatoes:
    • Place the potatoes in a large pot and cover with water. Add a pinch of salt to the water.
    • Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
    • Drain the potatoes and let them cool slightly.
  3. Smash the Potatoes:
    • Lightly grease a baking sheet with olive oil.
    • Place the cooked potatoes on the baking sheet, spacing them evenly apart.
    • Using a fork or a potato masher, gently press down on each potato to smash them to about 1/2 inch thick.
  4. Season the Potatoes:
    • Drizzle the smashed potatoes with olive oil.
    • Sprinkle the potatoes with garlic powder, onion powder, paprika, salt, and black pepper.
  5. Bake the Potatoes:
    • Place the baking sheet in the preheated oven.
    • Bake the potatoes for 20-25 minutes, or until they are golden brown and crispy on the edges.
  6. Garnish and Serve:
    • Remove the potatoes from the oven and let them cool slightly.
    • Garnish with freshly chopped parsley before serving.
