Crispy Smashed Potatoes Recipe
Ingredients:
- 1 1/2 pounds small potatoes (Yukon Gold or red potatoes work well)
- 2-3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C).
- Cook the Potatoes:
- Place the potatoes in a large pot and cover with water. Add a pinch of salt to the water.
- Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Smash the Potatoes:
- Lightly grease a baking sheet with olive oil.
- Place the cooked potatoes on the baking sheet, spacing them evenly apart.
- Using a fork or a potato masher, gently press down on each potato to smash them to about 1/2 inch thick.
- Season the Potatoes:
- Drizzle the smashed potatoes with olive oil.
- Sprinkle the potatoes with garlic powder, onion powder, paprika, salt, and black pepper.
- Bake the Potatoes:
- Place the baking sheet in the preheated oven.
- Bake the potatoes for 20-25 minutes, or until they are golden brown and crispy on the edges.
- Garnish and Serve:
- Remove the potatoes from the oven and let them cool slightly.
- Garnish with freshly chopped parsley before serving.
