Custard Muffins

 

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup shredded coconut (optional for texture)

Instructions:

  1. Prepare the Batter:
    • Preheat your oven to 350°F (175°C).
    • Line a muffin tin with paper liners or grease it well.
    • In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder.
    • In another bowl, mix the melted butter, eggs, milk, and vanilla extract until well combined.
    • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
    • If using, fold in the shredded coconut for added texture.
  2. Bake the Muffins:
    • Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
    • Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
    • Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
  3. Serve:
    • Serve the custard muffins warm or at room temperature. They are perfect for breakfast, brunch, or a delightful snack.
