Custard Muffins
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1 cup shredded coconut (optional for texture)
Instructions:
- Prepare the Batter:
- Preheat your oven to 350°F (175°C).
- Line a muffin tin with paper liners or grease it well.
- In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder.
- In another bowl, mix the melted butter, eggs, milk, and vanilla extract until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- If using, fold in the shredded coconut for added texture.
- Bake the Muffins:
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
- Serve:
- Serve the custard muffins warm or at room temperature. They are perfect for breakfast, brunch, or a delightful snack.
