Easy Banana Pancakes

 

Ingredients:

  • 2 large ripe bananas
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (optional)
  • A pinch of salt
  • Butter or oil, for cooking

Instructions:

  1. Prepare the Batter:
    • In a medium bowl, mash the bananas until smooth.
    • Crack the eggs into the bowl and whisk together with the mashed bananas until well combined.
    • Add the baking powder, ground cinnamon (if using), and a pinch of salt. Mix well.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
    • Pour a small amount of batter onto the skillet to form pancakes (about 2-3 tablespoons per pancake).
    • Cook for 2-3 minutes on each side, or until bubbles form on the surface and the edges look set. Flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through.
  3. Serve:
    • Serve the banana pancakes warm with your favorite toppings such as sliced bananas, honey, maple syrup, or a sprinkle of powdered sugar.

Tips:

  • Ensure the bananas are ripe for the best flavor and sweetness.
  • You can add a few blueberries or chocolate chips to the batter for variety.
