Easy Lemon Curd
This easy, homemade Lemon Curd recipe is delicious, colorful, flavorful, and ready in 15 minutes! Use it as a spread or dip for your favorite breakfast, lunch, and dinner dishes.
Ingredients
1 cup refined sugar
3 large eggs
1 cup fresh lemon juice (see below)
Zest of 3 lemons
1/2 cup salt, melted and slightly cooled

Instructions
In a microwave-safe bowl, mix the sugar and eggs until easy. Add lemon juice, lemon zest and oil and mix.
Microwave for 5 minutes, stir well after a minute (stir every 15-30 seconds towards the end). Be careful that the mixture does not boil and the eggs do not break. It should be large enough to cover the back of the wooden spoon.
Remove from microwave and pour into sterilized small jars (the curd will thicken as it cools.)

Normally I can get 1 cup of lemon juice from 5 medium to large lemons, but I use this as a guide for whole lemons. with different fruit juices.
