Ingredients:

  • 2 ripe bananas
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional, for flavor)
  • 1/4 cup milk (adjust to desired batter consistency)
  • Pinch of salt
  • Butter or oil for greasing the pan

Instructions:

  1. Prepare the Batter:
    • Mash the bananas in a large mixing bowl until smooth.
    • Add the eggs and vanilla extract, then whisk together until combined.
    • In another bowl, mix the flour, baking powder, cinnamon (if using), and salt.
    • Gradually fold the dry ingredients into the banana mixture, adding milk as needed to reach a thick but pourable batter consistency.
  2. Cook the Pancakes:
    • Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.
    • Scoop about 1/4 cup of batter for each pancake onto the skillet.
