Fresh Corn and Vegetable Salad Recipe
Ingredients:
- 4 cups fresh corn kernels (or canned/frozen corn, drained)
- 1 cup diced red bell pepper
- 1 cup diced green bell pepper
- 1/2 cup diced red onion
- 1 cup diced cherry tomatoes
- 1/2 cup sliced jalapeño peppers (optional, adjust to taste)
- 1/4 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons fresh lime juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon ground cumin
- Salt and black pepper to taste
Instructions:
- Prepare the Vegetables:
- In a large bowl, combine the corn kernels, red bell pepper, green bell pepper, red onion, cherry tomatoes, jalapeño peppers (if using), and chopped cilantro.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, ground cumin, salt, and black pepper.
- Combine and Toss:
