Fried Chicken Drumsticks with Vegetable Fried Rice Recipe

 

Ingredients:

For the Fried Chicken Drumsticks:

  • 8-10 chicken drumsticks
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil (for frying)

For the Vegetable Fried Rice:

  • 3 cups cooked rice (preferably day-old)
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions:

  1. Marinate the Chicken:
    • Place the chicken drumsticks in a large bowl and pour the buttermilk over them. Cover and refrigerate for at least 2 hours or overnight.
  2. Prepare the Fried Chicken:
    • In a large shallow dish, combine the flour, paprika, garlic powder, onion powder, salt, and black pepper.
    • Remove the chicken drumsticks from the buttermilk, letting the excess drip off. Dredge each drumstick in the flour mixture, coating it thoroughly.
    • In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C). Fry the chicken drumsticks in batches for about 10-12 minutes, turning occasionally, until golden brown and cooked through. Drain on paper towels.
  3. Prepare the Vegetable Fried Rice:
    • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the chopped onion and garlic, and sauté until fragrant.
    • Add the mixed vegetables and cook for 3-4 minutes until tender.
    • Push the vegetables to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until fully cooked, then mix them with the vegetables.
    • Add the cooked rice to the skillet and stir-fry for a few minutes until heated through.
    • Add the soy sauce, oyster sauce (if using), and sesame oil. Stir well to combine. Season with salt and pepper to taste.
    • Garnish with chopped green onions.
  4. Serve:
    • Serve the fried chicken drumsticks over a bed of vegetable fried rice. Enjoy your delicious and hearty meal!
