2 tablespoons fresh parsley, chopped

1 tablespoon melted butter, optional

Preparation Steps

  1. Preheat the oven. Set your oven to 425°F (220°C). Lightly grease a large baking dish or roasting pan with olive oil.
  2. Prepare the potatoes. Wash the baby potatoes thoroughly and pat them dry. Cut larger potatoes into quarters and smaller ones in half to ensure even cooking.
  3. Prepare the onions. Peel the yellow onions and slice them into thick wedges. Keep the pieces large enough to hold their shape while roasting.
  4. Make the garlic herb butter. In a small bowl, combine the olive oil, melted butter, minced garlic, smoked paprika, Italian seasoning, rosemary, thyme, garlic powder, salt, black pepper, and optional red pepper flakes. Stir until well combined.
  5. Season the potatoes. Place the potatoes in a large mixing bowl. Pour about two-thirds of the garlic herb mixture over them and toss until evenly coated.
  6. Start roasting. Arrange the seasoned potatoes in the prepared baking dish, spreading them into a single layer with the cut sides facing down. Roast for 15 minutes.
  7. Add the onions. Toss the onion wedges with the remaining garlic herb mixture. Remove the baking dish from the oven, add the onions, and gently stir everything together.
  8. Roast until golden. Return the dish to the oven and continue roasting for 20–25 minutes, turning once halfway through, until the potatoes are fork-tender with crispy golden edges and the onions are soft and caramelized.
  9. Add extra flavor. For a deeper golden finish, broil for 2–3 minutes, watching carefully to prevent burning.
  10. Finish and serve. Remove the roasted potatoes and onions from the oven. Drizzle with the optional melted butter, sprinkle generously with fresh parsley, and toss gently before serving.
