Grilled Steak with Herb Butter and Mashed Potatoes
Ingredients:
For the Steak:
- 2 ribeye steaks (about 1 inch thick)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 4 tablespoons butter, softened
For the Mashed Potatoes:
- 4 large potatoes, peeled and cut into chunks
- 1/2 cup milk
- 4 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)

- Preheat the grill to medium-high heat.
- Rub the steaks with olive oil, and season generously with salt and pepper.
- In a small bowl, mix the softened butter with minced garlic, parsley, and thyme. Set aside.
- Grill the steaks for about 4-5 minutes per side for medium-rare, or until desired doneness.
- Remove the steaks from the grill and let them rest for a few minutes. Top with the herb butter while resting.
For the Mashed Potatoes:
- Boil the potato chunks in a large pot of salted water until tender, about 15-20 minutes.
- Drain the potatoes and return them to the pot. Add the butter and milk.
- Mash the potatoes until smooth and creamy. Season with salt and pepper to taste.
- Garnish with fresh chopped parsley.
Serve the grilled steaks with a generous portion of mashed potatoes on the side. Enjoy your meal!
