Ham and Egg Breakfast Cups Recipe
Ingredients:
- 12 slices of deli ham
- 12 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- Salt and pepper to taste
- Fresh parsley or chives, chopped (optional, for garnish)
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with non-stick cooking spray.
2. Prepare the Ham Cups:
- Line each muffin cup with a slice of ham, pressing it down gently to form a cup shape. The edges of the ham slices should stick up slightly above the edges of the muffin cups.
3. Add Cheese and Eggs:
- Sprinkle about a tablespoon of shredded cheese into the bottom of each ham cup.
- Crack an egg into each ham cup over the cheese. If desired, you can lightly beat the egg before pouring it into the ham cup for a more uniform texture.
- Season each egg with a pinch of salt and pepper.
4. Bake:

- Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the egg whites are set and the yolks are cooked to your desired doneness.
- If you prefer fully cooked yolks, bake for an additional 2-3 minutes.
5. Serve:
- Remove the muffin tin from the oven and let the ham and egg cups cool for a few minutes.
- Carefully remove each ham and egg cup from the muffin tin using a small spatula or spoon.
- Garnish with chopped fresh parsley or chives, if desired.
