Hasselback Potatoes Recipe

 

Ingredients:

  • 12-15 small to medium-sized potatoes (Yukon Gold or red potatoes work well)
  • 3 tbsp olive oil
  • 2 tbsp melted butter
  • 4 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp fresh rosemary, chopped
  • 1 tsp fresh thyme, chopped
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 425°F (220°C) if using an oven. Alternatively, prepare your air fryer according to the manufacturer’s instructions.
  2. Prepare Potatoes:
    • Wash and dry the potatoes thoroughly. Place a potato on a cutting board and use chopsticks or wooden spoons on either side to prevent cutting all the way through. Slice the potato thinly, about 1/8 inch apart, making sure not to cut all the way through to keep the bottom intact. Repeat with all the potatoes.
  3. Season Potatoes:
    • In a small bowl, mix together the olive oil, melted butter, minced garlic, salt, black pepper, rosemary, and thyme. Place the potatoes in a large bowl and drizzle the mixture over them, making sure to get some seasoning in between the slices.
  4. Bake or Air Fry:
    • Oven: Place the potatoes on a baking sheet lined with parchment paper. Bake in the preheated oven for 45-60 minutes, or until the potatoes are crispy on the edges and tender on the inside. Baste with more olive oil mixture halfway through baking if desired.
    • Air Fryer: Arrange the potatoes in the air fryer basket in a single layer. Air fry at 400°F (200°C) for 20-25 minutes, or until the potatoes are crispy on the edges and tender on the inside. Shake the basket halfway through cooking to ensure even cooking.
  5. Add Cheese (Optional):
    • If using Parmesan cheese, sprinkle it over the potatoes during the last 5 minutes of baking or air frying.
  6. Garnish and Serve:
    • Remove the potatoes from the oven or air fryer and garnish with fresh parsley. Serve hot as a side dish or appetizer.
