Hasselback Potatoes Recipe

 

 

 

Ingredients:

  • 4 medium-sized potatoes (Yukon Gold or Russet)
  • 4 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheese (cheddar, Parmesan, or mozzarella)
  • Fresh parsley for garnish

Instructions:

  1. Prepare the Potatoes:
    • Preheat your oven to 200°C (400°F).
    • Wash the potatoes thoroughly and pat them dry. Leave the skins on.
    • Place each potato on a cutting board. Use two wooden spoons or chopsticks on either side of the potato to prevent cutting all the way through. Slice thin slits across the potato, about 3mm apart.
  2. Season the Potatoes:
    • In a small bowl, mix melted butter, olive oil, garlic, thyme, salt, and black pepper.
    • Place the potatoes on a baking tray. Brush the butter mixture generously over each potato, ensuring it seeps into the slits.
  3. Bake the Potatoes:
    • Bake in the preheated oven for 45 minutes. Every 15 minutes, remove the tray and brush more of the butter mixture over the potatoes to keep them moist and flavorful.
  4. Add the Cheese:
    • Sprinkle shredded cheese over the potatoes and return them to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Garnish with fresh parsley and serve warm as a side dish to grilled meats, roasted chicken, or any meal.
