Hasselback Potatoes Recipe
Ingredients:
- 4 medium-sized potatoes (Yukon Gold or Russet)
- 4 tbsp unsalted butter, melted
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp dried thyme or rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup shredded cheese (cheddar, Parmesan, or mozzarella)
- Fresh parsley for garnish
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 200°C (400°F).
- Wash the potatoes thoroughly and pat them dry. Leave the skins on.
- Place each potato on a cutting board. Use two wooden spoons or chopsticks on either side of the potato to prevent cutting all the way through. Slice thin slits across the potato, about 3mm apart.
- Season the Potatoes:
- In a small bowl, mix melted butter, olive oil, garlic, thyme, salt, and black pepper.
- Place the potatoes on a baking tray. Brush the butter mixture generously over each potato, ensuring it seeps into the slits.
- Bake the Potatoes:
- Bake in the preheated oven for 45 minutes. Every 15 minutes, remove the tray and brush more of the butter mixture over the potatoes to keep them moist and flavorful.
- Add the Cheese:
- Sprinkle shredded cheese over the potatoes and return them to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve:
- Garnish with fresh parsley and serve warm as a side dish to grilled meats, roasted chicken, or any meal.
