Hearty Cheesy Potato and Onion Pie with Homemade Gravy
Ingredients:
For the Pie:
- 1 package of pre-made puff pastry (or homemade if preferred)
- 2 large potatoes, peeled and thinly sliced
- 1 large onion, thinly sliced
- 2 cups shredded cheese (cheddar or a mix of your favorites)
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
For the Gravy:
- 2 cups beef or vegetable broth
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- Salt and pepper to taste
- Optional: 1 teaspoon Worcestershire sauce for extra flavor
Instructions:
Preparing the Pie:
- Preheat your oven to 375°F (190°C).
- Sauté the onions and potatoes: In a large skillet, heat butter and olive oil over medium heat. Add the onions and potatoes, season with salt, pepper, and thyme, and cook until the onions are translucent and potatoes slightly tender, about 10-15 minutes. Let cool slightly.
- Assemble the pie: Roll out half the puff pastry on a lightly floured surface to fit your pie dish. Lay the first sheet into the dish, letting the edges overhang. Layer half the potato and onion mixture into the base, top with half the cheese, and repeat the layers. Place the second sheet of pastry over the top, seal the edges, and trim any excess.
- Add finishing touches: Brush the top of the pie with beaten egg. Make a few slits in the top to allow steam to escape during baking.
- Bake: Place the pie in the oven and bake for about 35-40 minutes or until the pastry is puffed and golden brown.
Making the Gravy:
- Simmer the broth: In a small saucepan, bring the broth to a simmer.
- Thicken the gravy: Mix cornstarch with cold water to create a slurry. Whisk this into the simmering broth until the gravy thickens, about 5 minutes. Season with salt, pepper, and Worcestershire sauce if using.
Serving:
