Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 2 stalks celery, chopped
  • 1 bell pepper, chopped (any color)
  • 2 cups chopped potatoes (any variety, peeled if preferred)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup peas (fresh or frozen)
  • 1 cup green beans, cut into pieces
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients:
    • Wash and chop all the vegetables. Mince the garlic.
  2. Sauté the Vegetables:
    • In a large pot, heat the olive oil over medium heat.
    • Add the onion and garlic and sauté until the onions become translucent.
