Hearty Mixed Fried Rice Recipe

 

 

 

 

Ingredients:

  • 2 cups cooked rice (preferably day-old rice as it fries better)
  • 2 tablespoons cooking oil
  • 2 garlic cloves, minced
  • 1/2 cup chopped onions
  • 1/2 cup sliced sausages (your choice of chicken, pork, or beef)
  • 1/2 cup diced carrots
  • 1/2 cup corn kernels
  • 1/2 cup chopped green peas
  • 1/2 cup diced pineapple
  • 1/2 cup sliced mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • 2 eggs, beaten
  • 2 tablespoons chopped green onions or parsley for garnish

  1. Prepare Ingredients:
    • Make sure all your ingredients are prepped before you start cooking as the process will move quickly.
  2. Cook Eggs:
    • Heat a teaspoon of oil in a large pan or wok over medium heat.
    • Pour in the beaten eggs and scramble until just set. Remove from the pan and set aside.
  3. Sauté Aromatics:
    • Add more oil to the pan. Sauté garlic and onions until fragrant and translucent.
  4. Cook Sausages and Vegetables:
    • Increase the heat to medium-high. Add the sausages and fry until they start to brown.
    • Add the carrots, corn, green peas, mushrooms, and pineapple. Stir-fry for about 3-5 minutes until the veggies are just tender.
  5. Add Rice:
    • Add the cooked rice to the pan. Break up any clumps and mix well with the vegetables and sausage.
  6. Season the Fried Rice:
    • Pour soy sauce and oyster sauce over the rice. Stir well to ensure the rice is evenly coated with the sauces. Season with salt and pepper to taste. Cook for another 3-4 minutes, stirring often to prevent the rice from sticking to the pan.
  7. Finish the Dish:
    • Add the scrambled eggs back into the pan. Mix well to distribute throughout the rice.
    • Adjust seasoning if necessary.
  8. Serve:
    • Remove from heat and garnish with chopped green onions or parsley.
    • Serve hot as a main dish or a fulfilling side.
