2 tablespoons freshly chopped parsley

Preparation Steps

  1. Preheat the oven. Set your oven to 425°F (220°C). Lightly grease a large baking dish or roasting pan with olive oil.
  2. Prepare the vegetables. Wash and halve the baby potatoes. Trim the green beans and chop the carrots into evenly sized pieces to help everything cook properly.
  3. Make the herb seasoning. In a small bowl, combine the olive oil, minced garlic, rosemary, thyme, Italian seasoning, paprika, garlic powder, salt, black pepper, and lemon juice. Stir until well blended.
  4. Season the chicken. Pat the chicken breasts dry with paper towels. Rub them generously with about half of the prepared herb mixture, coating both sides.
  5. Start roasting the potatoes. Toss the potatoes and carrots with most of the remaining seasoning. Arrange them in the baking dish and roast for 15 minutes to give them a head start.
  6. Add the chicken. Remove the baking dish from the oven and arrange the seasoned chicken breasts alongside the potatoes and carrots. Return to the oven and roast for another 15 minutes.
  7. Add the green beans. Toss the green beans with the remaining seasoning and arrange them around the chicken. Drizzle the melted butter over the chicken and vegetables.
  8. Finish roasting. Continue cooking for 10–15 minutes, or until the potatoes are fork-tender and the chicken reaches an internal temperature of 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts.
  9. Rest and serve. Remove the baking dish from the oven and let the chicken rest for 5 minutes. Sprinkle everything with freshly chopped parsley and spoon the flavorful pan juices over the top.
