Here is a recipe for making delicious birria tacos at home:

 

Ingredients

For the Birria:

  • 3 pounds beef chuck roast, cut into chunks
  • 2 tablespoons vegetable oil
  • 5 dried guajillo chiles, stemmed and seeded
  • 2 dried ancho chiles, stemmed and seeded
  • 2 dried pasilla chiles, stemmed and seeded
  • 4 cloves garlic, peeled
  • 1 onion, quartered
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup apple cider vinegar
  • 4 cups beef broth
  • Salt to taste

For the Tacos:

  • Corn tortillas
  • Chopped onion
  • Chopped cilantro
  • Lime wedges
  • Shredded cheese (optional)

Instructions

  1. Prepare the Sauce:
    • In a dry skillet over medium heat, toast the guajillo, ancho, and pasilla chiles until they are fragrant, about 1-2 minutes per side. Be careful not to burn them.
    • Transfer the toasted chiles to a bowl and cover them with hot water. Let them soak for about 20 minutes until they are soft.
    • Drain the chiles and place them in a blender with garlic, onion, oregano, cumin, black pepper, cinnamon, apple cider vinegar, and a little beef broth. Blend until smooth.
  2. Cook the Birria:
    • Heat vegetable oil in a large pot over medium-high heat. Add the beef chunks and sear them until browned on all sides.
    • Pour the blended chile sauce over the beef and add the remaining beef broth. Bring to a boil, then reduce the heat to low and cover the pot. Simmer for 3-4 hours, or until the beef is tender and easily shredded. Adjust seasoning with salt.
  3. Assemble the Tacos:
    • Heat a skillet over medium heat. Dip the corn tortillas into the birria broth, then place them in the skillet to warm them up and make them pliable.
    • Fill each tortilla with shredded beef, then fold it over to form a taco. Cook each taco until the tortilla is slightly crispy.
    • Serve the tacos with chopped onion, cilantro, lime wedges, and shredded cheese if desired.
  4. Enjoy:
    • Serve the birria tacos with a small bowl of the birria broth on the side for dipping, known as “consommé.”
