Homemade Pickled Beets

Pickled beets are a classic homemade side dish known for their beautiful deep ruby color and irresistible balance of sweet, tangy, and earthy flavors. Tender slices of beet are soaked in a seasoned vinegar brine, allowing them to absorb plenty of flavor while keeping their naturally rich taste.

This traditional recipe is wonderfully simple and uses everyday ingredients. The addition of whole peppercorns and fresh dill gives the beets an aromatic, slightly savory finish that complements the sweet-and-sour brine. Pickled beets are delicious served alongside roasted meats, sandwiches, salads, or simply enjoyed straight from the refrigerator.

Ingredients

6 medium fresh beets
1 cup white vinegar
½ cup water
½ cup granulated sugar
1 teaspoon salt
1 teaspoon whole black peppercorns
½ teaspoon whole coriander seeds, optional
2 cloves garlic, lightly crushed
2 tablespoons fresh dill, chopped
1 small red onion, thinly sliced, optional

Preparation

1. Cook the Beets

Wash the beets thoroughly under cold running water to remove any dirt. Leave the skins and a small portion of the stems attached while cooking, as this helps preserve their beautiful color.

Place the beets in a large saucepan and cover them completely with water. Bring the water to a boil, then reduce the heat and simmer for approximately 30–40 minutes, depending on their size.

The beets are ready when a fork or small knife can easily pierce the center.

Drain the cooked beets and allow them to cool until they are comfortable to handle. Gently rub or peel away the skins, then trim the ends.

2. Slice the Beets

Cut the peeled beets into rounds approximately ¼-inch thick. You can also cut them into wedges or cubes if preferred.

Place the sliced beets into a large heat-safe bowl or clean glass jar. If using red onion, layer some of the thin slices between the beets.

3. Prepare the Pickling Brine

In a medium saucepan, combine the vinegar, water, sugar, and salt.

Add the black peppercorns, coriander seeds, and crushed garlic. Bring the mixture to a gentle boil over medium heat while stirring occasionally.

Continue stirring until the sugar and salt have completely dissolved. Allow the brine to simmer gently for about 2–3 minutes so the spices can begin releasing their flavors.

Remove the saucepan from the heat.

4. Pickle the Beets

Carefully pour the warm pickling liquid over the sliced beets. Make sure the beets are well covered with the brine and that some of the peppercorns and seasonings are distributed throughout.

Sprinkle fresh dill over the beets and gently stir everything together.

Allow the mixture to cool to room temperature before covering the container.

5. Refrigerate

Once cooled, cover the beets tightly and place them in the refrigerator.

Although they can be eaten after several hours, the flavor becomes much better after 24 hours. For an even deeper sweet-and-tangy flavor, allow them to refrigerate for 2–3 days before serving.

As they rest, the beets absorb the vinegar, sugar, garlic, herbs, and spices, creating a wonderfully flavorful result.

How to Serve Pickled Beets

Serve the pickled beets cold or at room temperature. Spoon a little of the seasoned pickling liquid over them and garnish with additional fresh dill and a few peppercorns for an attractive presentation.

They make an excellent side dish for grilled or roasted meats and are also delicious added to green salads. You can pair them with goat cheese or feta, use them in grain bowls, or serve them as part of a vegetable platter.

For a simple snack, enjoy a few chilled slices directly from the refrigerator.

Storage

Keep the pickled beets covered and refrigerated in their brine. For the best quality and flavor, enjoy them within 2–3 weeks and always use a clean utensil when removing beets from the container.

This recipe is intended as a refrigerator-pickled beet recipe, not as a shelf-stable canning method.

Conclusion

Homemade Pickled Beets are an easy way to transform simple fresh beets into a colorful and flavorful side dish. Their natural sweetness pairs beautifully with the bright acidity of vinegar, while dill, garlic, and peppercorns add extra depth.

With their vibrant color, tender texture, and refreshing sweet-and-sour flavor, these pickled beets deserve a permanent place in the refrigerator. Make a batch ahead of time, allow the flavors to develop overnight, and you will have a delicious homemade accompaniment ready whenever you need it.
