Homemade Strawberry Ice Cream Recipe
Ingredients:
For the Strawberry Puree:
- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
For the Ice Cream Base:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- Few drops of red food coloring (optional, for a more vibrant color)
Instructions:
1. Prepare the Strawberry Puree:
- In a medium saucepan, combine the chopped strawberries, sugar, and lemon juice.
- Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10 minutes.
- Remove from heat and let cool slightly.
- Puree the strawberry mixture in a blender or food processor until smooth. Set aside to cool completely.
2. Prepare the Ice Cream Base:
- In a large bowl, whisk together the heavy cream, milk, sugar, vanilla extract, and salt until the sugar is dissolved.
- Stir in the cooled strawberry puree and mix well. If you desire a more vibrant pink color, add a few drops of red food coloring and stir until evenly distributed.

- Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
- If you don’t have an ice cream maker, you can pour the mixture into a shallow container and place it in the freezer. Stir the mixture every 30 minutes to break up ice crystals until it is firm and creamy, about 3-4 hours.
4. Freeze the Ice Cream:
- Transfer the churned ice cream into an airtight container.
- Freeze for at least 4 hours or overnight until firm.
5. Serve:
- Scoop the strawberry ice cream into bowls or cones and enjoy!
