Homemade Strawberry Swirl Ice Cream

 

Ingredients:

For the Ice Cream Base:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1 tablespoon vanilla extract
  • A pinch of salt

For the Strawberry Swirl:

  • 1 1/2 cups fresh or frozen strawberries, chopped
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice

Instructions:

  1. Make the Strawberry Swirl:
    • In a medium saucepan, combine the strawberries, sugar, and lemon juice.
    • Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 10 minutes.
    • Remove from heat and allow the strawberry mixture to cool completely. You can refrigerate it to speed up the cooling process.
  2. Prepare the Ice Cream Base:
    • In a large mixing bowl, whisk together the heavy cream, whole milk, sugar, vanilla extract, and salt until the sugar is completely dissolved.
    • Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, usually about 20-25 minutes, until it reaches a soft-serve consistency.
  3. Add the Strawberry Swirl:
    • Once the ice cream has churned, transfer half of it to a freezer-safe container.
    • Spoon half of the cooled strawberry mixture over the ice cream.
    • Add the remaining ice cream on top, followed by the remaining strawberry mixture.
    • Use a knife or a spatula to gently swirl the strawberry mixture into the ice cream, creating a marbled effect.
  4. Freeze the Ice Cream:
    • Cover the container and freeze the ice cream for at least 4 hours, or until it is firm enough to scoop.
  5. Serve:
    • Scoop the ice cream into bowls and enjoy your homemade strawberry swirl ice cream!
