Honey-Glazed Roasted Chicken

 

 

Ingredients:

  • 2 lbs chicken (thighs, drumsticks, or breast)
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 2 tablespoons ketchup or tomato paste
  • 2 cloves garlic (minced)
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice or vinegar
  • Optional garnish: chopped parsley or sesame seeds

Instructions:

Prepare the Marinade:

  1. In a mixing bowl, whisk together soy sauce, olive oil, honey, ketchup, minced garlic, paprika, black pepper, salt, and lemon juice.

Marinate the Chicken:

  1. Place the chicken pieces in a large bowl or ziplock bag.
  2. Pour the marinade over the chicken, ensuring each piece is well-coated.
  3. Cover and refrigerate for at least 1 hour (or overnight for deeper flavor).

Cook the Chicken:

  1. For Oven Roasting:
    • Preheat your oven to 400°F (200°C).
    • Arrange the chicken pieces on a baking tray lined with parchment paper or foil.
    • Brush the chicken with extra marinade and roast for 25-30 minutes.
    • Flip the chicken halfway through and baste again with the marinade.
  2. For Grilling:
    • Preheat the grill to medium heat.
    • Grill the chicken for 5-7 minutes per side, brushing with marinade regularly until cooked through.
  3. For Pan-Frying:
    • Heat a skillet over medium heat with a bit of oil.
    • Sear the chicken on both sides, then lower the heat and cover the pan to cook thoroughly.
    • Brush with marinade as it cooks for a caramelized glaze.

Serve:

  1. Once the chicken is cooked, let it rest for 5 minutes.
  2. Slice (if desired) and drizzle any remaining glaze or juices over the chicken.
  3. Garnish with chopped parsley or sesame seeds and serve with rice, salad, or roasted vegetables.

Tips:

  • For Extra Glaze: Simmer the leftover marinade in a saucepan for a thicker sauce.
  • Add Heat: Include chili flakes or sriracha for a spicy kick.
  • Check Doneness: Ensure the internal temperature of the chicken reaches 165°F (74°C).
