Key Lime Pie

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 can (14 oz) sweetened condensed milk
  • 4 large egg yolks
  • 1/2 cup key lime juice (freshly squeezed or bottled)
  • 1 tablespoon grated lime zest

For the Topping:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Fresh cherries for garnish
  • Chopped nuts (optional)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Crust:
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.
    • Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust in the preheated oven for 10 minutes. Let it cool while you prepare the filling.
  3. Prepare the Filling:
    • In a large bowl, whisk together the sweetened condensed milk, egg yolks, key lime juice, and lime zest until well combined.
    • Pour the filling into the cooled crust.
  4. Bake the Pie:
    • Bake the pie in the preheated oven for 15-20 minutes, or until the filling is set but still slightly jiggly in the center.
    • Remove the pie from the oven and let it cool to room temperature, then refrigerate for at least 2 hours, or until fully chilled.
  5. Prepare the Whipped Cream:
    • In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread or pipe the whipped cream over the chilled pie.
  6. Garnish and Serve:
    • Garnish the pie with fresh cherries and chopped nuts if desired.
    • Slice and serve chilled.
