Lemon Crumb Cake Recipe

 

 

 

Ingredients

For the Cake:
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • Zest of 1 lemon
For the Filling:
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon zest
For the Crumb Topping:
  • 1 cup plain cake crumbs (from a plain sponge or leftover cake)
  • 1/4 cup powdered sugar
  • Zest of 1 lemon

Instructions

  1. Prepare the Cake:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour an 8-inch round cake pan.
    • In a medium bowl, whisk together flour, baking powder, and salt.
    • In a large bowl, cream together butter and sugar until light and fluffy.
    • Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
    • Gradually add the flour mixture, alternating with milk, starting and ending with flour. Stir in lemon zest.
    • Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  2. Make the Filling:
    • In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Fold in lemon zest.
  3. Assemble the Cake:
    • Slice the cooled cake horizontally into two layers.
    • Spread the whipped cream mixture over the bottom layer.
    • Place the second layer on top of the filled layer.
  4. Add the Crumb Topping:
    • In a small bowl, mix together cake crumbs, powdered sugar, and lemon zest.
    • Gently press the crumb mixture onto the top of the cake.
  5. Garnish:
    • Just before serving, dust with additional powdered sugar and garnish with lemon slices.
  6. Serve:
    • Chill the cake in the refrigerator for at least 1 hour before serving to set the layers.
