Lemon Crumb Cake Recipe
Ingredients
For the Cake:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup milk
- Zest of 1 lemon
For the Filling:
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon zest
For the Crumb Topping:
- 1 cup plain cake crumbs (from a plain sponge or leftover cake)
- 1/4 cup powdered sugar
- Zest of 1 lemon
Instructions
- Prepare the Cake:
- Preheat your oven to 350°F (175°C).
- Grease and flour an 8-inch round cake pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Gradually add the flour mixture, alternating with milk, starting and ending with flour. Stir in lemon zest.
- Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Make the Filling:
- In a mixing bowl, whip the heavy cream with powdered sugar and vanilla until stiff peaks form. Fold in lemon zest.
- Assemble the Cake:
- Slice the cooled cake horizontally into two layers.
- Spread the whipped cream mixture over the bottom layer.
- Place the second layer on top of the filled layer.
- Add the Crumb Topping:
- In a small bowl, mix together cake crumbs, powdered sugar, and lemon zest.
- Gently press the crumb mixture onto the top of the cake.
- Garnish:
- Just before serving, dust with additional powdered sugar and garnish with lemon slices.
- Serve:
- Chill the cake in the refrigerator for at least 1 hour before serving to set the layers.
