- Chill in the refrigerator for about 30 minutes to set.

- In a small bowl, mix the gelatin with 1/4 cup of cold water and set aside to bloom.
- Whisk together lemon zest, lemon juice, sugar, and eggs in a heatproof bowl. Place the bowl over a pot of simmering water (double boiler method), whisking constantly until the mixture thickens and coats the back of a spoon.
- Remove from heat and stir in the bloomed gelatin until dissolved. Let the mixture cool to room temperature.

- Whip the additional heavy cream with powdered sugar until stiff peaks form.
