Lemon Mousse Recipe
Ingredients:
- For the Lemon Curd:
- 1/2 cup fresh lemon juice (about 3-4 lemons)
- 1 tablespoon lemon zest
- 1/2 cup granulated sugar
- 3 large eggs
- 1/4 cup unsalted butter, cut into small pieces
- For the Mousse:
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
- For Garnish:
- Whipped cream
- Lemon slices or zest
Instructions:
- Prepare the Lemon Curd:
- In a medium saucepan, whisk together the lemon juice, lemon zest, sugar, and eggs until smooth.
- Place the saucepan over medium heat and add the butter.
- Cook, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.
- Remove from heat and strain the lemon curd through a fine-mesh sieve into a bowl to remove any lumps.
- Cover the surface of the lemon curd with plastic wrap to prevent a skin from forming and let it cool to room temperature. Then refrigerate until chilled.
- Prepare the Whipped Cream:
- In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
- Combine and Chill:
- Gently fold the chilled lemon curd into the whipped cream until well combined and smooth.
- Spoon the lemon mousse into serving glasses or bowls.
- Refrigerate for at least 2 hours to set.
- Serve and Garnish:
- Before serving, top the lemon mousse with a dollop of whipped cream.
- Garnish with a lemon slice or lemon zest.
