Lemon Mousse Recipe

 

Ingredients:

  • For the Lemon Curd:
    • 1/2 cup fresh lemon juice (about 3-4 lemons)
    • 1 tablespoon lemon zest
    • 1/2 cup granulated sugar
    • 3 large eggs
    • 1/4 cup unsalted butter, cut into small pieces
  • For the Mousse:
    • 1 cup heavy whipping cream
    • 2 tablespoons powdered sugar
    • 1 teaspoon vanilla extract
  • For Garnish:
    • Whipped cream
    • Lemon slices or zest

Instructions:

  1. Prepare the Lemon Curd:
    • In a medium saucepan, whisk together the lemon juice, lemon zest, sugar, and eggs until smooth.
    • Place the saucepan over medium heat and add the butter.
    • Cook, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.
    • Remove from heat and strain the lemon curd through a fine-mesh sieve into a bowl to remove any lumps.
    • Cover the surface of the lemon curd with plastic wrap to prevent a skin from forming and let it cool to room temperature. Then refrigerate until chilled.
  2. Prepare the Whipped Cream:
    • In a large mixing bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  3. Combine and Chill:
    • Gently fold the chilled lemon curd into the whipped cream until well combined and smooth.
    • Spoon the lemon mousse into serving glasses or bowls.
    • Refrigerate for at least 2 hours to set.
  4. Serve and Garnish:
    • Before serving, top the lemon mousse with a dollop of whipped cream.
    • Garnish with a lemon slice or lemon zest.
