Ingredients:

  • 6 medium russet potatoes, peeled and diced
  • 4 slices bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 cups chicken broth
  • 2 cups whole milk (or half-and-half for extra creaminess)
  • 2 tbsp all-purpose flour
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 2 tbsp butter
  • Salt and pepper to taste
  • Chopped green onions (for garnish)
  • Additional shredded cheese and crumbled bacon (for garnish)

Instructions:

  1. Cook the Bacon:
    • In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside on a paper towel-lined plate. Leave about 2 tablespoons of bacon grease in the pot.
  2. Sauté the Aromatics:
    • Add the diced onion to the pot with the bacon grease and sauté until softened, about 4-5 minutes. Add garlic and cook for an additional minute.
  3. Cook the Potatoes:
    • Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Thicken the Soup:
    • In a small bowl, whisk together the flour and milk (or half-and-half) until smooth. Slowly pour the mixture into the pot while stirring. Simmer for an additional 5-7 minutes, stirring frequently, until the soup thickens.
  5. Blend the Soup (Optional):
    • For a creamier texture, use an immersion blender to puree part of the soup, leaving some chunks of potato for texture. Alternatively, transfer a portion of the soup to a blender and blend, then return it to the pot.
  6. Add the Flavor:
    • Stir in the butter, shredded cheese, and sour cream until melted and well combined. Season with salt and pepper to taste.
  7. Serve:
    • Ladle the soup into bowls and garnish with crispy bacon, additional shredded cheese, green onions, and a dollop of sour cream.

Tips:

  • For a richer flavor, you can add heavy cream instead of milk.
  • Serve with crusty bread or warm biscuits for a complete meal.
