Loaded Potato Soup Recipe
Ingredients:
- 6 medium russet potatoes, peeled and diced
- 4 slices bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 cups chicken broth
- 2 cups whole milk (or half-and-half for extra creaminess)
- 2 tbsp all-purpose flour
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 2 tbsp butter
- Salt and pepper to taste
- Chopped green onions (for garnish)
- Additional shredded cheese and crumbled bacon (for garnish)
Instructions:
- Cook the Bacon:
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set aside on a paper towel-lined plate. Leave about 2 tablespoons of bacon grease in the pot.
- Sauté the Aromatics:
- Add the diced onion to the pot with the bacon grease and sauté until softened, about 4-5 minutes. Add garlic and cook for an additional minute.
- Cook the Potatoes:
- Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Thicken the Soup:
- In a small bowl, whisk together the flour and milk (or half-and-half) until smooth. Slowly pour the mixture into the pot while stirring. Simmer for an additional 5-7 minutes, stirring frequently, until the soup thickens.
- Blend the Soup (Optional):
- For a creamier texture, use an immersion blender to puree part of the soup, leaving some chunks of potato for texture. Alternatively, transfer a portion of the soup to a blender and blend, then return it to the pot.
- Add the Flavor:
- Stir in the butter, shredded cheese, and sour cream until melted and well combined. Season with salt and pepper to taste.
- Serve:
- Ladle the soup into bowls and garnish with crispy bacon, additional shredded cheese, green onions, and a dollop of sour cream.
Tips:
- For a richer flavor, you can add heavy cream instead of milk.
