Magic Custard Cake Recipe

Ingredients:

  • 4 large eggs, separated
  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (115g) unsalted butter, melted and cooled
  • 1 tsp vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 2 cups (500ml) milk, lukewarm
  • Powdered sugar for dusting

Instructions:

Step 1: Prepare the Ingredients

  1. Preheat the oven to 325°F (160°C). Grease and line an 8×8-inch (20x20cm) baking pan with parchment paper.
  2. Separate the eggs into two bowls (whites in one, yolks in the other). Ensure the whites are free of any yolk to whip them properly.

Step 2: Mix the Batter

  1. Using an electric mixer, beat the egg yolks with the sugar until pale and creamy.
  2. Add the melted butter and vanilla extract, then mix until smooth.
  3. Gradually sift in the flour and mix until incorporated.
  4. Slowly add the lukewarm milk, a little at a time, and mix until fully combined. The batter will be thin.

Step 3: Whip the Egg Whites

  1. In a clean bowl, whip the egg whites until stiff peaks form.
  2. Gently fold the whipped egg whites into the batter in thirds. The mixture will look slightly lumpy but that’s normal.

Step 4: Bake

  1. Pour the batter into the prepared baking pan and smooth the surface.
  2. Bake for 45–60 minutes, or until the top is golden brown and the center is set but slightly wobbly.
  3. Remove from the oven and let it cool in the pan for at least 3 hours. This allows the layers to set properly.

Step 5: Serve

  1. Once cooled, cut the cake into squares and dust with powdered sugar.
  2. Serve chilled or at room temperature.

Enjoy this magical layered dessert! Let me know if you’d like tips or variations. 😊
