Magic Custard Cake Recipe
Ingredients:
- 4 large eggs, separated
- 3/4 cup (150g) granulated sugar
- 1/2 cup (115g) unsalted butter, melted and cooled
- 1 tsp vanilla extract
- 3/4 cup (95g) all-purpose flour
- 2 cups (500ml) milk, lukewarm
- Powdered sugar for dusting
Instructions:
Step 1: Prepare the Ingredients
- Preheat the oven to 325°F (160°C). Grease and line an 8×8-inch (20x20cm) baking pan with parchment paper.
- Separate the eggs into two bowls (whites in one, yolks in the other). Ensure the whites are free of any yolk to whip them properly.
Step 2: Mix the Batter
- Using an electric mixer, beat the egg yolks with the sugar until pale and creamy.
- Add the melted butter and vanilla extract, then mix until smooth.
- Gradually sift in the flour and mix until incorporated.
- Slowly add the lukewarm milk, a little at a time, and mix until fully combined. The batter will be thin.
Step 3: Whip the Egg Whites
- In a clean bowl, whip the egg whites until stiff peaks form.
- Gently fold the whipped egg whites into the batter in thirds. The mixture will look slightly lumpy but that’s normal.
Step 4: Bake
- Pour the batter into the prepared baking pan and smooth the surface.
- Bake for 45–60 minutes, or until the top is golden brown and the center is set but slightly wobbly.
- Remove from the oven and let it cool in the pan for at least 3 hours. This allows the layers to set properly.
Step 5: Serve
- Once cooled, cut the cake into squares and dust with powdered sugar.
- Serve chilled or at room temperature.
