Meatball Stew Recipe
Ingredients:
- For the meatballs:
- 500g (1 lb) ground beef or lamb
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup breadcrumbs
- 1 egg
- For the stew:
- 2 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium potatoes, sliced
- 1 medium zucchini, sliced
- 1 large tomato, diced
- 2 cups beef or vegetable stock
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp turmeric
- Salt and pepper to taste
- Fresh parsley or cilantro, chopped, for garnish
Instructions:
- Prepare the meatballs:
- In a large bowl, combine the ground beef, chopped onion, garlic, paprika, cumin, salt, pepper, breadcrumbs, and egg.
- Mix well and form into small meatballs (about 1 inch in diameter). Set aside.
- Cook the stew:
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and garlic. Sauté until translucent.
- Stir in the sliced potatoes, zucchini, and tomato. Cook for 5 minutes.
- Add the paprika, cumin, turmeric, salt, and pepper. Stir to coat the vegetables.
- Add stock and simmer:
- Pour in the beef or vegetable stock. Bring to a simmer and cook for 10 minutes.
- Add the meatballs:
- Carefully add the meatballs to the pot. Cover and simmer for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.
- Serve:
- Garnish with freshly chopped parsley or cilantro before serving. Serve hot with crusty bread or rice.
