Meatball Stew Recipe

 

 

 

Ingredients:

  • For the meatballs:
    • 500g (1 lb) ground beef or lamb
    • 1 small onion, finely chopped
    • 1 clove garlic, minced
    • 1 tsp paprika
    • 1/2 tsp cumin
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1/4 cup breadcrumbs
    • 1 egg
  • For the stew:
    • 2 tbsp olive oil
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 2 medium potatoes, sliced
    • 1 medium zucchini, sliced
    • 1 large tomato, diced
    • 2 cups beef or vegetable stock
    • 1 tsp paprika
    • 1 tsp cumin
    • 1/2 tsp turmeric
    • Salt and pepper to taste
    • Fresh parsley or cilantro, chopped, for garnish

Instructions:

  1. Prepare the meatballs:
    • In a large bowl, combine the ground beef, chopped onion, garlic, paprika, cumin, salt, pepper, breadcrumbs, and egg.
    • Mix well and form into small meatballs (about 1 inch in diameter). Set aside.
  2. Cook the stew:
    • Heat olive oil in a large pot over medium heat.
    • Add the diced onion and garlic. Sauté until translucent.
    • Stir in the sliced potatoes, zucchini, and tomato. Cook for 5 minutes.
    • Add the paprika, cumin, turmeric, salt, and pepper. Stir to coat the vegetables.
  3. Add stock and simmer:
    • Pour in the beef or vegetable stock. Bring to a simmer and cook for 10 minutes.
  4. Add the meatballs:
    • Carefully add the meatballs to the pot. Cover and simmer for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.
  5. Serve:
    • Garnish with freshly chopped parsley or cilantro before serving. Serve hot with crusty bread or rice.
