Mini Apple Fritter Waffle Donuts
Crispy outside, soft and fluffy inside, packed with cinnamon apples and finished with a sweet vanilla glaze.
Ingredients
For the waffle donuts
2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
⅓ cup granulated sugar
2 large eggs
¾ cup whole milk
¼ cup unsalted butter, melted
1 teaspoon vanilla extract
1½ cups apples, peeled and finely diced
2 tablespoons brown sugar
1 tablespoon butter
For the glaze
1 cup powdered sugar
2–3 tablespoons milk
½ teaspoon vanilla extract
Pinch of cinnamon
Instructions
Melt 1 tablespoon butter in a skillet. Add the diced apples, brown sugar, and a pinch of cinnamon. Cook for 3–4 minutes until slightly softened. Set aside to cool.
In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, salt, and granulated sugar.
In another bowl, whisk the eggs, milk, melted butter, and vanilla.
Pour the wet ingredients into the dry ingredients and stir just until combined. Gently fold in the cooked apples.
Preheat and lightly grease a mini waffle maker. Spoon in enough batter to fill it without overflowing.
Cook for 3–5 minutes, or until deeply golden and crisp. Repeat with the remaining batter.
Mix powdered sugar, milk, vanilla, and cinnamon until you have a smooth glaze.
Drizzle the warm apple fritter waffle donuts generously with the glaze and serve.
