Mini Lemon Tarts Recipe
Ingredients:
For the crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, cold and cut into small cubes
- 1/4 teaspoon salt
- 1 large egg yolk
- 1-2 tablespoons ice water (if needed)
For the lemon filling:
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1/2 cup unsalted butter, melted
- 1/4 teaspoon salt
For the garnish:
- Thin lemon slices, candied (optional)
- Fresh mint leaves (optional)
Instructions:
- Prepare the crust:
- In a food processor, combine the flour, powdered sugar, and salt. Pulse a few times to mix.
- Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and pulse until the dough starts to come together. If the dough is too dry, add ice water a tablespoon at a time until it forms a dough.
- Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Preheat the oven:
- Preheat your oven to 350°F (175°C).
- Form the tart shells:
- Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness.
- Cut out circles to fit into a mini muffin tin or mini tart pans.
- Press the dough circles into the tin or pans and trim any excess dough.
- Prick the bottom of each tart shell with a fork to prevent puffing.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. Let them cool completely.
- Prepare the lemon filling:
- In a medium bowl, whisk together the sugar and eggs until well combined.
- Add the lemon juice, lemon zest, melted butter, and salt. Mix until smooth.
- Pour the filling mixture into the cooled tart shells.
- Bake the tarts:
- Bake in the preheated oven for about 15-18 minutes, or until the filling is set and slightly golden around the edges.
- Allow the tarts to cool completely before removing them from the tin or pans.
- Garnish and serve:
- Garnish each tart with a thin slice of candied lemon and a fresh mint leaf if desired.
- Serve chilled or at room temperature.
