Mini Lemon Tarts Recipe

 

Ingredients:

For the crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1-2 tablespoons ice water (if needed)

For the lemon filling:

  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt

For the garnish:

  • Thin lemon slices, candied (optional)
  • Fresh mint leaves (optional)

Instructions:

  1. Prepare the crust:
    • In a food processor, combine the flour, powdered sugar, and salt. Pulse a few times to mix.
    • Add the cold butter cubes and pulse until the mixture resembles coarse crumbs.
    • Add the egg yolk and pulse until the dough starts to come together. If the dough is too dry, add ice water a tablespoon at a time until it forms a dough.
    • Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the oven:
    • Preheat your oven to 350°F (175°C).
  3. Form the tart shells:
    • Roll out the chilled dough on a lightly floured surface to about 1/8 inch thickness.
    • Cut out circles to fit into a mini muffin tin or mini tart pans.
    • Press the dough circles into the tin or pans and trim any excess dough.
    • Prick the bottom of each tart shell with a fork to prevent puffing.
    • Bake in the preheated oven for about 10-12 minutes, or until the edges are lightly golden. Let them cool completely.
  4. Prepare the lemon filling:
    • In a medium bowl, whisk together the sugar and eggs until well combined.
    • Add the lemon juice, lemon zest, melted butter, and salt. Mix until smooth.
    • Pour the filling mixture into the cooled tart shells.
  5. Bake the tarts:
    • Bake in the preheated oven for about 15-18 minutes, or until the filling is set and slightly golden around the edges.
    • Allow the tarts to cool completely before removing them from the tin or pans.
  6. Garnish and serve:
    • Garnish each tart with a thin slice of candied lemon and a fresh mint leaf if desired.
    • Serve chilled or at room temperature.
