Mixed Vegetable Patties Recipe
Ingredients:
- 2 medium potatoes, peeled and grated
- 1 large carrot, peeled and grated
- 1 medium zucchini, grated
- 1 small red onion, finely chopped
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/2 cup all-purpose flour
- 1/2 cup breadcrumbs
- 1/2 teaspoon ground cumin

Instructions:
- Prepare the Vegetables:
- Place the grated potatoes, grated carrot, and grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure the patties hold together and are not too wet.
- Mix the Ingredients:
- In a large bowl, combine the grated potatoes, grated carrot, grated zucchini, chopped red onion, chopped parsley, and chopped cilantro.
- Add the flour, breadcrumbs, ground cumin, ground coriander, paprika, salt, and pepper. Mix well until all the ingredients are evenly combined.
- Add the beaten egg to the mixture and mix until well incorporated.
- Form the Patties:

- Heat the Oil:
