Old Fashioned Pancakes
Ingredients:
- 1 1/2 cups all-purpose flour
- 3 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon white sugar
- 1 1/4 cups milk
- 1 egg
- 3 tablespoons butter, melted
- 1 teaspoon vanilla extract (optional)
Instructions:
- Mix Dry Ingredients:
- In a large bowl, sift together the flour, baking powder, salt, and sugar.
- Combine Wet Ingredients:
- In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
- Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the bowl with the dry ingredients. Stir just until blended; the batter will be slightly lumpy.
- Preheat Griddle or Pan:
- Heat a lightly oiled griddle or frying pan over medium-high heat. You can test if it’s ready by sprinkling a few drops of water on the surface; if they dance and sizzle, the pan is ready.
- Cook the Pancakes:
- Pour or scoop about 1/4 cup of batter for each pancake onto the hot griddle.
- Cook until bubbles form on the surface of the pancakes and the edges start to look set, about 2-3 minutes.
- Flip with a spatula and cook until the other side is golden brown, about 1-2 minutes more.
- Serve:
- Serve hot with your favorite toppings such as butter, maple syrup, fresh fruits, or whipped cream.
Tips:
- Don’t Overmix: To keep the pancakes fluffy, mix the batter just until the ingredients are combined. Overmixing can make the pancakes tough.
- Resting the Batter: Letting the batter rest for about 5 minutes before cooking can help the pancakes rise better.
- Keep Warm: If making a large batch, keep cooked pancakes warm in a low oven (about 200°F) until ready to serve.
