Parmesan Roasted Yellow Squash

 

Ingredients:

  • 4 yellow squash, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 400°F (200°C).
    • Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Season the Squash:
    • In a large bowl, toss the thinly sliced yellow squash with olive oil until evenly coated.
    • Add the garlic powder, dried oregano, dried basil, salt, and pepper. Toss again to coat the slices with the seasoning.
  3. Arrange on Baking Sheet:
    • Spread the seasoned squash slices in a single layer on the prepared baking sheet.
    • Sprinkle the grated Parmesan cheese evenly over the top of the squash slices.
  4. Roast the Squash:
    • Roast in the preheated oven for 15-20 minutes, or until the squash is tender and the Parmesan cheese is golden and crispy.
  5. Serve:
    • Remove from the oven and let cool slightly.
    • Garnish with chopped fresh parsley if desired.
    • Serve warm as a side dish or snack.
