Passion Fruit Curd Recipe
Ingredients
- 1 cup passion fruit pulp (from fresh passion fruits or store-bought pulp)
- 1 cup granulated sugar
- 4 large egg yolks
- 1/2 cup unsalted butter, cubed
- 1 tablespoon lemon juice
- Pinch of salt
Instructions
- Prepare the Passion Fruit Pulp:
- If using fresh passion fruits, scoop out the pulp into a bowl and strain to remove the seeds. You should have about 1 cup of juice.
- Cook the Curd:
- In a medium saucepan, whisk together the passion fruit juice, sugar, egg yolks, lemon juice, and salt until smooth.
- Place the saucepan over medium heat and add the butter cubes.
- Cook the mixture, whisking constantly, until the butter melts and the curd thickens. This should take about 5-7 minutes. Do not let the mixture boil, as it may curdle.
- Strain and Cool:
- Once the curd has thickened, remove it from the heat and pour it through a fine-mesh sieve into a clean bowl to remove any lumps.
- Let the curd cool to room temperature, then cover and refrigerate until fully chilled and set.
- Serve:
- Enjoy the passion fruit curd as a spread on toast, scones, or as a filling for pastries and cakes.
