Ingredients

For the Cake Batter:
  • 2 cups (250g) all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (120ml) milk or buttermilk
For the Topping:
  • 2-3 peaches (fresh or canned), sliced
  • 2 tbsp granulated sugar (optional, for sprinkling)
  • Powdered sugar (optional, for dusting)

Instructions

Step 1: Prepare the Cake Batter
  1. Preheat your oven to 350°F (175°C) and grease a round 9-inch cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the butter and sugar together until light and fluffy using a hand mixer or stand mixer.
  4. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the dry ingredients. Mix until just combined.
Step 2: Assemble the Cak
  1. Pour the batter into the prepared cake pan and spread it evenly.
  2. Arrange the peach slices on top in a circular pattern, gently pressing them into the batter.
  3. Sprinkle 2 tablespoons of granulated sugar over the peaches if you prefer a caramelized top.
Step 3: Bake the Cak
  1. Bake in the preheated oven for 40-50 minutes or until a toothpick inserted into the center comes out clean.
  2. Remove the cake from the oven and allow it to cool for about 10 minutes in the pan before transferring it to a wire rack to cool completely.
Step 4: Serve
  1. Dust the top of the cooled cake with powdered sugar for decoration.
  2. Slice and serve as is, or pair with whipped cream or vanilla ice cream.

Tips

  • For Canned Peaches: Drain the peaches thoroughly before using them.
  • Add a Twist: Sprinkle cinnamon or nutmeg over the peaches for added flavor.
  • Storage: Store the cake in an airtight container at room temperature for up to 2 days or refrigerate for longer shelf life.
