Peanut Brittle Recipe

 

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/4 cup water
  • 1 cup unsalted peanuts
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Baking Sheet:
    • Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
  2. Cook the Sugar Mixture:
    • In a medium saucepan, combine the sugar, corn syrup, salt, and water.
    • Cook over medium heat, stirring until the sugar is dissolved.
    • Attach a candy thermometer to the side of the pan, making sure it does not touch the bottom.
  3. Add Peanuts:
    • Once the mixture reaches 280°F (138°C), stir in the peanuts.
    • Continue cooking, stirring frequently, until the temperature reaches 300°F (150°C) (hard crack stage).
  4. Add Remaining Ingredients:
    • Remove the saucepan from heat and immediately stir in the butter, baking soda, and vanilla extract.
    • The mixture will bubble up. Stir quickly and carefully.
  5. Pour and Spread:
    • Pour the mixture onto the prepared baking sheet.
    • Use a spatula to spread it out into an even layer.
  6. Cool and Break:
    • Allow the peanut brittle to cool completely at room temperature.
    • Once cooled, break it into pieces using your hands or a knife.
  7. Store:
    • Store the peanut brittle in an airtight container at room temperature.
