Peanut Brittle Recipe
Ingredients:
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 1/4 cup water
- 1 cup unsalted peanuts
- 2 tablespoons unsalted butter, softened
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
Instructions:
- Prepare the Baking Sheet:
- Line a baking sheet with parchment paper or a silicone baking mat. Set aside.
- Cook the Sugar Mixture:
- In a medium saucepan, combine the sugar, corn syrup, salt, and water.
- Cook over medium heat, stirring until the sugar is dissolved.
- Attach a candy thermometer to the side of the pan, making sure it does not touch the bottom.
- Add Peanuts:
- Once the mixture reaches 280°F (138°C), stir in the peanuts.
- Continue cooking, stirring frequently, until the temperature reaches 300°F (150°C) (hard crack stage).
- Add Remaining Ingredients:
- Remove the saucepan from heat and immediately stir in the butter, baking soda, and vanilla extract.
- The mixture will bubble up. Stir quickly and carefully.
- Pour and Spread:
- Pour the mixture onto the prepared baking sheet.
- Use a spatula to spread it out into an even layer.
- Cool and Break:
- Allow the peanut brittle to cool completely at room temperature.
- Once cooled, break it into pieces using your hands or a knife.
- Store:
- Store the peanut brittle in an airtight container at room temperature.
