Peanut Butter Cake with Peanut Butter Frosting

 

Ingredients:

Cake:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Frosting:

  • 1/2 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 3 cups powdered sugar
  • 1/3 cup heavy cream (more if needed)
  • 1 teaspoon vanilla extract
  • 1 cup chopped peanuts (for topping)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
    • Grease and flour two 9-inch round cake pans.
  2. Prepare Cake Batter:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
    • In a large mixing bowl, beat the butter and peanut butter together until creamy and smooth.
    • Add the granulated sugar and brown sugar, and beat until light and fluffy.
    • Add the eggs one at a time, beating well after each addition.
    • Mix in the vanilla extract.
    • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Begin and end with the dry ingredients, mixing just until combined.
  3. Bake the Cakes:
    • Divide the batter evenly between the prepared cake pans.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
    • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  4. Prepare Frosting:
    • In a large mixing bowl, beat the butter and peanut butter together until smooth and creamy.
    • Gradually add the powdered sugar, one cup at a time, beating well after each addition.
    • Add the heavy cream and vanilla extract, and beat until the frosting is light and fluffy. Add more cream if necessary to achieve a spreadable consistency.
  5. Assemble the Cake:
    • Place one cake layer on a serving plate.
    • Spread a generous amount of frosting over the top of the first layer.
    • Place the second cake layer on top of the frosting.
    • Frost the top and sides of the entire cake with the remaining frosting.
    • Sprinkle the chopped peanuts on top of the cake for garnish.
  6. Serve and Enjoy:
